It was for a clean protein chocolate bar so I watched the video & immediately loved her style & persona. I followed her on FB & started watching some of her videos on <a href="https://www.youtube.com/user/ssolom9" target="_blank"><span style="color: #cc0000;">YouTube</span></a>. She recommends intermittent fasting, which I'd heard about briefly when I was doing Paleo long ago & also my husband mentioned it to me, but Classic Kellie, I paid no real attention at the time.<br />
<br />
I have tried LITERALLY EVERYTHING ELSE. I had been eating a Vegan diet & have comfortably settled in on a Vegetarian diet. But I realize from reading & watching videos that yo-yo dieting/calorie restricting & then binging/eating crap food, etc for years has made my metabolism very inflexible. I really like what I've read about intermittent fasting & I feel like it could work out for me since I'm usually so busy during the day that it's really annoying to take the time to make meals.<br />
<br />
Since I've started IF I've noticed I have been hungry, but nothing that can't be dealt with by drinking lemon or lime water/green juice. And I guess that will peter out as my body (gherlin production) gets used to the new fasting/feeding schedule. I'm going to shoot for a feeding window of about 5-10pm & fast from 10-5 or 6pm the next day. It's worked well so far & I look forward to seeing the benefits!<br />

Last night when I was thinking about what I could make for breakfast today - as it's been getting a little colder & I've been on a green smoothie kick for a while now) I thought I'd try to mix it up a little. I knew I had half of a purple yam (purple skin, white flesh) that I needed to use, and some fresh mushrooms that are on their way to becoming slimy. And of course I have a ton of other veggies, so I thought, ok - breakfast bowl.<br />
<br />
I threw a few things in - a little coconut oil, chopped red onion, lightly chopped caulifower, the mushrooms & then the yams (which I grated so they'd cook up pretty quick). For seasoning I used 3 cloves of garlic (through a garlic press), some Himalayan seas salt & some <a href="https://flavorgod.com/shop/product/garlic-lovers-seasoning/#804879389859-3B" target="_blank">Flavor God's Garlic Lovers</a>. (I LOVE his stuff) & garlic, apparently.<br />
<br />
I thought it needed to be a little "saucier" - I didn't want to eat it & have it be too dry & regret my seasoning choices, so I threw in a little of the dressing/marinade that I'd made for the roasted vegetables I'd had last night. I would classify it as a seasoned/garlicky balsamic reduction - I'll post the recipe. (Although as you will come to find out, I kind of fly by the seat of my pants rather than follow any kind of recipe - I mix things in until I like what's going on)<br />
<br />
I threw some hemp hearts on top for protein, and all in all, it was really good, & filling. But when I first looked at it in the bowl, I was like, "Wow, that is really monocromatic!" - not like my usual dishes, which are usually bursting with color.<br />
<br />
So yes, I would definitely make this again, and experiment with other veggies, to add some color.<br />

<u><i>Balsamic Dressing</i></u><br />
<br />
1/3 C Extra Virgin Olive Oil<br />
1 TBSP coconut oil (you can use liquid, but my apartment is still warm enough that the solid coconut oil mixed very well)<br />
1/4-1/3 C Balsamic Vinegar<br />
1-2 TBSP Balsamic Vinegar Reduction<br />
4 garlic gloves (minced)<br />
1 tsp Sea Salt (or to taste)<br />
1 tsp <a href="https://flavorgod.com/shop/product/dynamite-seasoning/#813327020657" target="_blank">Flavor God's Dynamite</a> (this is definitely my go-to seasoning - gives everything kick)<br />

Mix & keep in glass dressing bottle (I use <a href="https://epicure.com/en/products/cookware/tools/cruet" target="_blank">Epicure's Cruet</a>)<br />
Feel free to adjust seasonings to suit your taste.<br />

<br />
I always start out with the best intentions - I do my best -my absolute best- for the first few days. The weight is coming off - I check the scale each and every morning - and then I end up feeling justified in slacking a little - a treat here - and there - and then there again - and then I notice the scale isn't doing "it's thing" anymore (I wonder why?!!??) & I get discouraged & then comes the binge. Then I'm fully on the downward spiral & it's all over for another few months until I decide to try again. And each time I try again, I'm always heavier than I was the time I "tried" before.<br />
<br />
Well ... On Saturday, April 16th, I decided enough was enough (AGAIN!) - April 5th I saw a number on the scale I've never seen before & never want to again. I felt awful...horrible...ashamed. It took another little while (the 16th) for me to decide, firmly, to start again. It was like before, I'd been in a haze of apathy. With depression being prevalent in my life as of the past few years, it's been harder & harder to escape that fog of no drive or motivation. It took seeing that number on the scale that day to drive me snap out of that haze. I legitimately began to care about my health & well being & worried about how sick I would be in the near/distant future if I didn't make some serious changes, and soon.<br />
<br />
I'm grateful for my friend <a href="http://jiggychoofitnessfanatic.blogspot.ca/" target="_blank">JJ</a> (<a href="http://www.beachbodycoach.com/esuite/home/JIGGYCHOO" target="_blank">Beachbody</a> coach extraordinaire) who would text me periodically during my dismal haze, like she was checking to see if I was "ready". I was so excited to text her to let her know that I was, indeed, finally ready. I could tell she was pumped for me. And it was even better when I got to text her that I'd lost my first 10 lbs (those first few come off super quick for me).<br />
<br />
Normally, by now, I would've at least had a mini-freak out (*binge) & started out on that shame spiral again. But Sunday, April 24th, I consciously upped my calories on <a href="http://www.myfitnesspal.com/profile/kellielambert77" target="_blank">My Fitness Pal</a> & changed my macros for the day to add more carbs than I'd been eating (25%C / 40%F / 35%P)...and you know what? It worked GREAT. I didn't feel guilty AND - I didn't go crazy. I stayed within my adjusted goals for the day & Monday morning, I got right back to my regular routine & regular macros. <br />
<br />
All I can tell you is, right now, I feel good. I feel driven, motivated, dedicated. My husband has always said to me - "You know what to do - you just have to do it." And he's totally right. I do have the know how - I've lost over 100 lbs before (more on that whole thing later) I just needed to get my priorities (or lack thereof) straight - AGAIN - for, like, the millionth time.<br />

(I use cilantro paste because when I buy fresh it always goes bad & cost wise, the paste is pretty good for how much you get.) I don't know how much fresh you'd need to get the same taste.</div>

~Add in approx 2 cloves minced garlic (I just used approx 1 tsp garlic powder)</div>

First off...I gave up sugar...Like all forms including maple syrup, honey, agave, etc. The only things I'll still have are stevia & sucralose (no haters please, it's my choice :) ) And what I've found is that my skin has cleared up remarkably. For me, it's been a really noticeable difference. Now I can feel comfortable going out in public sans make up & not be horribly embarrassed. (Hence the make up-less pics & videos on IG & FB lately) And when I do wear make up it's because I want to play around with colors & not because I feel like I need to cover up.<br />

I won't get too specific but all I know is, since I've gone Low Carb, High Fat, Keto, Atkins or whatever you want to call it, I've had none of that to worry about. So that's a win!</div>

I know I'm defined by the number it spits out, but I sure do like to see what it has to say every morning. Anyone else out there like that?</div>

First I took 1/2 C of the cacao butter & put it in a casserole dish & melted it in the oven at 300 for a little while (til it was completely melted). Then I spooned in 3 TBSP of Nikki's Chocolate Hazelnut Brownie Coconut Butter (available <a href="http://www.nikkiscoconutbutter.com/collections/all" target="_blank">here</a>), 2 TBSP of Nutiva's Coconut Manna, & 1 TBSP of Carrington Farms Organic Coconut Oil. For sweetener I added 1/3 C of Sugar Twin's granular sucralose. In retrospect I would've added liquid stevia, or maybe even powdered stevia (or when my <a href="http://authoritynutrition.com/erythritol/" target="_blank">erythritol</a> gets here I'll use that)...I say this because the sucralose DID NOT MIX WELL!!! It didn't incorporate into the mix...it just kind of stayed along the surface. </div>

The base was ice cubes made out of coconut milk (canned, but it had been mixed together ~ meaning the cream wasn't separated from the coconut water,so it was more "liquidy"... I had prepared these coconut milk ice cubes ahead of time, but if you didn't have those you could used canned coconut milk & regular ice cubes) Added to this was a bit of full fat cream (remember...low card, high fat diet here)... I used whipping cream. And I threw a little water in there just for fun. :)<br />

I added a scoop of <a href="http://www.leanfit.com/whey-protein-shake/" target="_blank">LeanFit's Vanilla Protein Powder</a> & some <a href="http://store.carringtonfarms.com/coconut-oil-organic-extra-virgin-54-oz-jar/" target="_blank">Extra Virgin Coconut oil</a>. For sweetener I added some liquid stevia. I used <a href="https://skinnygirlsweeteners.com/products/" target="_blank">Skinny Girl's</a> Liquid Stevia, but any sweetener of choice (in the stevia family) would work for this. You could add a little <a href="http://www.bobsredmill.com/xanthan-gum.html" target="_blank">xantham gum</a> but I didn't & found this shake to be thick and creamy as is.<br />

I'm now trying <a href="http://www.dietdoctor.com/lchf" target="_blank">Low Carb/High Fat</a>. So far it's been great & I'm down 10 lbs. I'm in what's called the induction phase so I'm trying to kkep my net carbs at about 20g/day. (Net carbs are the grams of carbs after you've subtracted the grams of dietary fiber)<br />

It's a little bizarre not worrying about fat because we've been so ingrained with the idea that fat makes you fat. But all I can tell you is I started this a week and a half ago & I've lost 10 lbs. I've eliminated sugar (all forms) and so far I've been doing okay with that (no freak outs with large cookie dough blizzards). Also, I've noticed that my skin has cleared up noticeably & I'm convinced it has to do with eliminating sugar & my increase in water intake.<br />
<br />
It's been a little tricky with prepping meals...I usually have to make something for the family & then something else for me...but it's been ok. Nomally we have the same protein source & then I'll have a salad or veggies along with it while they have veggies & rice or pasta. Sometimes, though, they just eat what I eat & that's even better! What's been awesome is Kacie eats my salads along with me at lunch time (she asks if she can have "leaves"), so it's good that she's learning to include veggies in her diet.<br />

So I'll try to keep you all posted as to how things come along & please wish me continued success!<br />

So why am I not seeing anything on the scale? Should I just ditch the scale? I'm addicted to the scale (weigh 1x/day) & it gets VERY frustrating when I don't see the numbers go down...especially when I know I'm eating well & working out.<br />

I will give it some more time, I guess. The last time I was eating really well & working out & the numbers were going down I was almost considering seeing an MD to see if there was something wrong metabolically. So I guess I'll hold to that this time around... If I'm not seeing results in 4 weeks of consistency (eating & exercise) I will go to my doctor to get some things checked out.<br />

*Saute the diced apples in coconut oil.</div>

*Soften/melt the coconut butter & oil in a bowl in the microwave (I did 39 seconds to be precise)</div>

*Add in the coconut chips, stevia, cinnamon & salt. </div>

*By this time the apples should be ready (you want them soft, but not burned); add them to the coconut butter mixture.</div>

*Spoon the mixture (about 1 TBSP at a time) into mini muffin cups of choice in a muffin tin (I used parchment paper mini muffin cups bc that's all I had...worked great!)</div>

Quest Choc Chunk Almond Cookies. . I LOVE Quest Bars! They are amazing! The flavors are so good & the macros in them are really good too! The only other time I've baked with Quest bars, I made little mini cheesecakes & they turned out pretty good. <br />

<span style="text-decoration: underline;"><strong>Ingredients</strong></span><br />
<ul>
<li>1 <a href="http://bit.ly/1rZwNoF" target="_blank">Double Chocolate Chunk Quest Bar</a>, cut into small chunks</li>
<li>2 egg whites</li>
<li>¼ cup all natural almond butter</li>
<li>1/3 cup oat flour</li>
<li>¼ cup almond meal flour</li>
<li>½ scoop vanilla protein powder</li>
<li>2 Tbsp. granulated stevia</li>
<li>¼ tsp. baking powder</li>
<li>1/4 cup Chocolate Chips, optional</li>
</ul>
<span style="text-decoration: underline;"><strong>Method</strong></span><br />
1. Pre-heat oven to 350 degrees F. Spray 4 small ramekins with cooking spray and set aside.<br />
2. Place egg whites and almond butter in a mixing bowl and whisk together until smooth. Add in the remainder of the ingredients and stir until well combined. Place cookie dough in the fridge for 30 minutes to 1 hour before baking.<br />
3. Take about ¼ cup (or ¼ of the total amount) of the cookie batter and spoon into one of the ramekins. Repeat this process until all 4 ramekins are filled. Bake in a pre-heated oven for 14-16 minutes. Remove and let cool slightly.<br />

They turned out pretty awesome! They were really goof when they were warm, right out of the oven...but a little dry when they cooled down. The trick was to heat them up in the microwave a little & they were good to go! Good little snack...great recipe!</div>
